Like its Loire neighbor Sancerre, which it closely resembles, Domaine des Corbillières Touraine is made from 100% Sauvignon Blanc. Unlike Sancerre, which has suffered from devastating frosts and severe shortages of late, the price of Touraine has remained an oasis of value for lovers of Loire Sauvignon Blanc. The clay soils of Touraine retain more moisture than the chalkier soils of Sancerre. As a result, Touraine is plumper, fruitier, and more quaffable than Sancerre (or the neighboring Pouilly-Fumé). The buoyant fruit of the 2021 Domaine des Corbillières sails over the palate with notes of citrus and green apple, seasoned by hints of mineral. Pair it with prawns, salmon, pasta salad, grilled chicken, and vegetarian dishes of all types.
Carlos’ Cheese Pairing: Capricho de Cabra
A bright, sweet, fresh cheese from Jumilla in south-eastern Spain, Capricho de Cabra is made from the milk of Murciana goats. This milk is high in fat and protein, which gives the cheese its incredible creaminess. Similar to French chevre, it offers a sweet and tangy characteristic with ample creaminess without being chalky and dry.
