Meticulously crafted at Lafite Rothschild's Los Vascos estate in Chile, the 2018 Los Vascos Gran Reserva Cabernet Sauvignon bears more than a passing resemblance to the domaine's illustrious Pauillac classified growth estates, including Lafite itself. Not so much with regard to the exact flavors (the terroirs differ), but in the aristocratic style of "R," shorthand for Rothschild, meaning the epitome of elegance, style, and class. This elegant red is made from 85% Cabernet Sauvignon, 10% Syrah, and 5% Carménère, sourced from plots in the high foothills of the Colchagua region. As in its Pauillac wines, Cabernet is king here, imparting classic notes of cedar, cassis, and blue-fruit notes, while the smaller components of Syrah and Carménère combine to add a gentle juiciness and balance to the fruit. The finish is long and minerally, a trait that the Colchagua terroir shares with Pauillac. Ready now.
Carlos’ Cheese Pairing: Mahón
Sharing its name with the port of Mahón on the island of Minorca, Spain, this semi-soft cow's milk cheese is rich, nutty, buttery and sweet, with a slight saltiness due in part to the sea salt content in the grasses the cows eat. During the maturation the cheese is hand rubbed with butter and paprika or oil, giving it its distinct bright-orange exterior.
An attractive cabernet sauvignon with blackcurrant, tobacco and some spice. It’s medium-bodied with round tannins and a flavorful finish. Very typical for a cab. 85% cabernet, 10% syrah and 5% carmenere. Delicious now.
The 2018 Cabernet Sauvignon Cromas Gran Reserva is the first vintage for a wine that is also 10% Syrah and 5% Carménère from Peralillo, Colchagua, and half aged in French barrels. Garnet red with violet flecks. The nose begins with black pepper and black currant, followed by ripe cherry and plum notes, along with a hint of bay leaf. Creamy in the mouth with accomplished, ample and polished tannins that retain their grip, this is a potent red with long-lasting flavor.
