Indigenous yeast fermentations in concrete vats at low temperatures, to preserve fresh fruit flavors and a delicate tannic structure. After fermentations are complete, fruit is slowly pressed, over a 24 hour period, using an ancient vertical press Julien acquired in the Côte D’Or.
The 2021 Fleurie comes from vines on granitic soil located at 470m altitude, 1.7-hectares split over two parcels. The élevage is for 9 months with no racking. This has a slight reduction on the nose at the moment, but you can still detect beguiling red berry fruit, wilted rose petals and hints of kirsch - a little Pinot Noir like. The palate is well-balanced with fine tannins. Nicely chiseled, fresh and poised with a twist of sour cherry towards the finish. Excellent.
