From Saint-Peray, located just south of Cornas in the northern Rhône, this distinctively rich, mouthfilling white is made from 90% Roussanne and 10% Marsanne. Matured seven months on its lees (yeasty sediment of fermentation), its crisp citrusy fruit is accented by notes of honey, smoked hazelnuts, and lime zest, with zesty minerality and fresh acidity on the finish. Distinctive and delicious.
Said to be one of the first intentionally made cheeses in Europe, this Basque gem is made from sheep’s milk in the French Pyrénées. This semi-firm cheese has a slightly oily texture with a savory and sweet nutty flavor with hints of figs, hazelnuts, and olives.
A rare, Roussanne-dominated representative of the appellation, Farge's 2019 Saint Peray Grain de Silex contains just 10% Marsanne. Mainly vinified in stainless steel, with 30% done in older, 400-liter barrels, the nose hints at pear, peach and pineapple, while the medium to full-bodied palate is silky textured and elegant, balancing ample fruit with gentle acids. Tasted twice (once blind), with consistent notes.
