Made by the globetrotting NZ winemaker Neil Goldschmidt, Forefathers Sauvignon Blanc is a delectable single-vineyard Sauvignon Blanc sourced from the 19-acre Wax Eye Vineyard, located in Marlborough, New Zealand. It opens with vibrant and fresh citrus aromatics, followed on the palate by flavors of white peach, passionfruit, and tropical stone fruits, with a hint of creaminess from three months of aging on the lees. The vineyard's mineral-laden glacial soils imbue the wine with excellent minerality, providing a brisk, racy finish.
Carlos’ Cheese Pairing: Tomme des Pyrénées
Wrapped in distinctive black wax, Tomme des Pyrénées is known for its fine structure. This mild, French cow’s milk cheese is definitely worth sinking your teeth into. It resembles a mild cheddar with its semi-soft texture and bright saltiness, with notes of butter and just a hint of yogurt tartness on the finish.
Huge floral, white peach, and passion fruit aromas. The mouth is similar with passion fruit and a touch of gooseberry. Long and flavorful with bright acidity. Finishes with an green apple zing, so characteristic of New World Sauvignon Blanc.
