Situated just outside of the town of St.-Emilion, the vineyard of Château Côte de Baleau is planted to 70% Merlot, 20% Cabernet Franc and 10% Cabernet Sauvignon. The terroir is composed primarily of limestone and sand soils, similar to those of the well-known Château Beau-Séjour Bécot, which is located nearby. Consulting winemaker Michel Rolland ferments the wine in stainless-steel tanks, followed by aging in French oak barrels (50% new) for 18 months. Awarding the 2016 Château Côte de Baleau an impressive score of 92 points, critic Jeb Dunnuck describes it as a "plump, sexy, fruit-loaded beauty that gives up tons of ripe black fruits, charred meat, and earthy, herbal aromas and flavors."
Similar in look and texture to Parmigiano Reggiano, Piave has fruity notes upfront with a bright and buttery finish, which makes it an extremely versatile cheese. To amp up the flavor of any dish in which you’d normally add Parmigiano Reggiano, try Piave Vecchio in its place.
