Cabernet Sauvignon is a thick-skinned, black grape producing the most classic, age worthy (and needing of aging) red wines. Typically has flavors of fresh herbs (often quite pronounced), cedar, cassis, mint, black currant, and violets. Usually full-bodied wines, cabernet is often astringent when young due to mouth puckering tannins (a product of the grape skins that helps wine age).
Cabernet Sauvignon is found in many locales, most notably in California and red Bordeaux -- particularly in the Medoc, including Pauillac, St. Julien and the famous classified growth Bordeaux -- and is labeled cabernet sauvignon in South America, Australia, Italy and Washington. It's also in Italy's "Super-Tuscan" wines but usually not labeled cabernet.

This wine typically starts life out as a young, tannic puppy, and although it has ripe flavors and a suppleness that can handle rich meats and cheeses, it's best to cellar it. This vintage is quite undeveloped, wrapped in tannic astringency, but with a hopeful core of fruit that should age well from 2008 on.

Another brilliant offering is the 2008 Cabernet Sauvignon Georges de Latour Private Reserve. It possesses a dense ruby/purple color along with terrific structure, lots of creme de cassis, minerality, beautiful purity of black currants and cherries, a judicious touch of oak, and a full-bodied, structural profile that is almost Bordeaux-like. This complete, rich and promising effort should be a 25-30-year wine.

Made in a more masculine style, the 2008 Dominus has all of that along with bigger body and more structure, fat, density and texture. Both are brilliant wines and they represent the finest back-to-back vintages for Dominus since 2001 and 2002 or 1990 and 1991. Both the 2007 and 2008 Dominus should drink well for 25-30 years.

The 2006 Napa Valley Cabernet Sauvignon offers aromas with luscious notes of blackberry, kirsch, blueberry and very subtle baking cocoa and spices aromas. On the palate, it is medium to full-bodied with supple, well-integrated tannins.

Deep crimson, with brick red hues. the 2008 Jester Cabernet shows liquorice, nutmeg and cassis notes which provide a lift to the subtle hints of French oak. The 2008 Monte Bello is striking. It is a decidedly muscular Monte Bello endowed with layers of dark fruit. Tobacco, mint, asphalt and crushed rocks develop in the glass, adding tons of complexity and finesse. A long, saline finish rounds things out beautifully. In 2008 the cold growing season stretched into October and the wine definitely has the feel of a cool vintage. The spring frost and the second year of drought conditions lowered yields significantly. Yields were just 1.25 tons per acre on average, but some of the older vineyards came in at less than 1 ton per acre. The balance of fruit, tannin and structure is simply extraordinary, but the wine needs time, most likely lots of it. In 2008 the blend is 72% Cabernet Sauvignon and 28% Merlot. Anticipated maturity: 2018-2038.

The 2008 Cabernet Sauvignon Hillside Select may turn out to be nearly as good. A great success for the vintage and further proof of just how good this year can be for Napa Bordeaux varietals, it boasts an opaque purple color as well as a big, sweet bouquet of white chocolate, espresso roast, oak, creme de cassis, blackberries and camphor. A potential candidate for the wine of the vintage, it is dense, full-bodied, rich, powerful and well-balanced. This is another compelling effort from Elias Fernandez and his two bosses, Doug and John Shafer. This 2008 should be fabulous when released in 2012, and last for 30+ years.

While still renowned for their portfolio of classic world-class reds, Shafer also turns out a terrific non-malolactic Chardonnay from the Red Shoulder Ranch. The only dramatic change made over recent years is that instead of 100% being barrel-fermented and oak-aged, 25% is now aged in stainless steel which has added freshness and possibly longevity. Introduced several years ago, the Cabernet Sauvignon One Point Five cuvee is aged 22 months in 100% new French oak. It is meant to be a reference point Cabernet from Stags Leap priced lower than Shafer's limited production, usually monumental Hillside Select Cabernet Sauvignon. Shafer's flagship offering is their monumental Cabernet Sauvignon Hillside Select (about 2,000 cases produced). Always 100% Cabernet Sauvignon aged for at least 30 months in oak, this is one of Napa's most profound wines. Since 1999, Shafer has made a Syrah/Petite Sirah blend (usually 80% of the former and 20% of the latter) aged 32 months in 100% new French oak. The first vintage, the 1999 Relentless, which they opened at the winery to show how well it is aging, is still a baby at age 11. I rated it 96 points, which is higher than the 93 points I gave it in 2002. So much for California Syrah not aging well! The 1999 is still intense with a plum color and lots of grilled meat, herb, licorice and spice characteristics.
