2007 Cabernet Sauvignon Wine



Cabernet Sauvignon is a thick-skinned, black grape producing the most classic, age worthy (and needing of aging) red wines. Typically has flavors of fresh herbs (often quite pronounced), cedar, cassis, mint, black currant, and violets. Usually full-bodied wines, cabernet is often astringent when young due to mouth puckering tannins (a product of the grape skins that helps wine age).

Cabernet Sauvignon is found in many locales, most notably in California and red Bordeaux -- particularly in the Medoc, including Pauillac, St. Julien and the famous classified growth Bordeaux -- and is labeled cabernet sauvignon in South America, Australia, Italy and Washington. It's also in Italy's "Super-Tuscan" wines but usually not labeled cabernet.

Deep, a bit reduced on the nose, and full as can be, with blackberry, cassis and prune aromas. The palate is super rich and concentrated, and frankly a bit heady. Flavors of burnt brown sugar, toast, tobacco, pepper and baked berry fruits are delicious, and the finish is dense and long. Drinkable now but best in another two to four years. The full-bodied, powerful, pure 2007 Cabernet Sauvignon Reserve is another outstanding effort revealing notes of spring flowers, toasty oak, creme de cassis, licorice, and graphite. One would have to go back to the 1990, 1991, 2001, or 2002 to find a Mondavi Cabernet Sauvignon Reserve this impressive. The 2007 should evolve for 20-25 years.

"Bright dark red. Complex, lively aromas of cherry, licorice, chocolate, tobacco leaf and spices. A juicy, spicy midweight with excellent tension and finesse to its youthfully imploded fruit, spice and chocolatey oak flavors. A very successful offering from Silver Oak, finishing with substantial dusty tannins, noteworthy length and a light touch. Aged for a full two years in 100% new American oak, but the oak element is not at all overbearing."
