Ferrari-Carano's 2012 FumÃ© Blanc has aromas of orange blossom, quince, white peach, Meyer lemon and mango complemented by flavors of pineapple, pear and guava. This wine has bright acidity and crisp freshness from the cool, stainless steel tank fermentation, while the subtle oak character from barrel aging adds, body, complexity and depth. Our FumÃ© Blanc pairs well with simple seafood and poultry dishes, and also holds up nicely with white meats such as veal and pork. The 2010 Chardonnay is a big, rich wine layered with tangerine, apricots, flowers and honeysuckle. The 2010 spent 11 months in French oak barrels (90% new) with lees stirring once a week, both of which add to the volume and density of the fruit. Hints of sweet French oak wrap around the delineated, generous finish. Anticipated maturity: 2012-2016.
We barrel fermented 60% of this wine, and aged that portion in barrel for eight months, offering the wine a touch of brown spice and vanilla, while cold fermenting the remainder to maximize a fresh fruit-forward character. Bright lemon and apple aromas mingle with hints of toasty barrel complexity, and on the palate, pear and pineapple with spice and refreshing acidity will have you coming back for another glass.
