Deep purple in color with a ruby red hue, this exceptionally well-balanced Cabernet Sauvignon exhibits ripe blackberry, cassis and plum fl avors, colored with a touch of mocha and coffee. The sweet, fruity entry is enhanced with a juicy mouthfeel, notes of savory herbs and velvety tannins, followed by a long, smooth finish.

Following its brilliant, silver straw-yellow hue, this Chardonnay has intense primary aromas of apple blossom, ripe pear and sweet lemon drop, complemented by toasty oak, spice and cream. The wine’s silky smooth texture is overlaid with bright juicy flavors of rich, ripe apple and pear, lingering into a fresh, satisfying finish. This rich, silky Chardonnay is ideal with lobster and other shellfish, especially if served in a butter or cream sauce, roasted poultry or other white meats, creamy pasta dishes, a buttery mushroom omelet or any meal tinged with sweet spices, like cinnamon, nutmeg or ginger.

A little on the sweet side, but crisp acidity provides a clean whisk of tartness, and the lemon-cream and orange flavors are absolutely delicious.

Barrel fermentation in new and seasoned French oak added toasty vanilla and spice complexities, and during 9 months of barrel ageing, we regularly stirred the "lees" in barrel, which adds a creamy texture and increases richness on the palate. Encouraging secondary fermentation adds additional complexity, and in the glass the wine is both creamy and crisp, with ripe apple, Meyer lemon, wet stone, and spiced vanilla flavors. Enjoy over the next 1-3 years.

We barrel fermented 60% of this wine, and aged that portion in barrel for eight months, offering the wine a touch of brown spice and vanilla, while cold fermenting the remainder to maximize a fresh fruit-forward character. Bright lemon and apple aromas mingle with hints of toasty barrel complexity, and on the palate, pear and pineapple with spice and refreshing acidity will have you coming back for another glass.
