When I chatted with winemaker Christophe Jaume at the winery’s introductory tasting earlier this year, he could scarcely contain his enthusiasm for the 2011 vintage in general, and this 2011 Ventoux in particular. His explained that Les Gelinottes vineyard’s ideal exposure was a unique bonus, due to the extra sun received in late August early September. The additional solar energy pumped up the already ripe, juicy fruit, and helped build a fine structure of soft tannins. Made from 50% Grenache and 50% Syrah planted on clay and sandy soils, this wine offer notes of crushed blackberry, baked blueberry and garrigue, with hints of toast and earth rising at the finish. This fresh, medium-bodied Rhone should be enjoyed now, and over the next 18 months.
This is our main production, deriving from grapes harvested at the end of March. The 100% hand-picked Malbec grapes are harvested in March and early April. The wine is derived from grapes grown in characteristic soils specifically chosen for their similar profile and low vigour. These include increasingly desirable areas in Valle de Uco. Grapes from different vineyards are vinified separately before the final blend. The destemmed and softly pressed grapes are vinified in stainless steel vats at 28Âºc. During the 15-day fermentation-maceration process the must is pumped over and punched down for optimal extraction. Free run juice only. It is sold after three months of bottle age. Aging vessel: French and American oak insertstaves into 30.000lt stainless tanks for 3 months, only 2 years of use for insertstaves.
Apothic Red is bold and enchanting, as it captures the dark fruit characteristics of Syrah and Zinfandel. These jammy flavors blend well with the elegant blackberry and black cherry characteristics of the Merlot and Cabernet Sauvignon grapes. The wine is further enhanced by undertones of mocha and vanilla.
Deep purple in color with a ruby red hue, this exceptionally well-balanced Cabernet Sauvignon exhibits ripe blackberry, cassis and plum fl avors, colored with a touch of mocha and coffee. The sweet, fruity entry is enhanced with a juicy mouthfeel, notes of savory herbs and velvety tannins, followed by a long, smooth finish.
The soulful notes of currant, tobacco and chocolate in our deep ruby Merlot precede a velvety drinkability. Lushly intense, the wine reveals layers of red cherry, plum, raspberry, strawberry and violet.
